Cabernet Sauvignon Vertical Trio
The 2009 Cabernet Sauvignon starts with a beautiful aroma of blueberry and black plum, with wisps of light java. The supple tannins and intense fruit flavors of black cherry, and plums, combine with vanilla and baking spices for an excellent structure and beautiful finish. Notes of coffee add to the complexity of this wine. The 2010 Cabernet Sauvignon starts out with tobacco, anise, and cedar jumping out of the glass. Currant preserves exist on the nose as well as transitioning into the palate. Hints of baking spices, particularly cinnamon and vanilla, can be caught lingering in the background. With the initial nose of tobacco and cedar reminding you of a vintage cigar box, the 2011 Cabernet opens up with a milk chocolate covered cherry and lingers with a teasing hint of bacon. The palate is broad and silky, confirming the nose with bright cherry, milk chocolate, and the sweet smokiness of molasses and brown sugar.
